Cette pi\u00e8ce se situe \u00e0 la base des pattes d\u2019un chevreuil. Vous aurez devin\u00e9 que celle-ci travaillera tr\u00e8s fort tout au long de la vie du cervid\u00e9; il est donc n\u00e9cessaire d\u2019opter pour une cuisson lente qui favorisera le rel\u00e2chement du collag\u00e8ne. Le r\u00e9sultat donnera une savoureuse pi\u00e8ce de viande tendre qui se d\u00e9tache litt\u00e9ralement de l\u2019os avec, en prime, de la d\u00e9licieuse moelle. C\u2019est d\u2019ailleurs de l\u00e0 que provient le terme ossobuco qui veut dire os \u00e0 trou en italien.\r\n\r\nComme la recette est simple et la cuisson lente, vous pouvez tr\u00e8s bien la pr\u00e9parer \u00e0 la maison, comme au camp de chasse. Dans les versions traditionnelles d\u2019ossobucos, il n'y a pas de champignons. Dans cette version, une touche l\u00e9g\u00e8rement bor\u00e9ale est relev\u00e9e gr\u00e2ce \u00e0 des champignons communs des for\u00eats qu\u00e9b\u00e9coises : chanterelles et champignons homards. Leur utilisation est \u00e0 votre discr\u00e9tion et vous pouvez les changer pour ce que vous avez en main.\r\n\r\nVous pouvez \u00e9galement troquer le vin pour une autre boisson, notamment de la bi\u00e8re. N\u2019h\u00e9sitez pas \u00e0 sortir des lignes de cette recette; le plus important est de vous faire plaisir et que ce soit bon. R\u00e9server.<\/li>\r\n \t<li>Faire un bouquet garni avec les fines herbes, si d\u00e9sir\u00e9, \u00e0 l'exception des feuilles de laurier et du persil. Attacher toutes les fines herbes avec de la ficelle de boucher pour \u00e9viter de devoir trier les fines herbes lors du service. R\u00e9server.<\/li>\r\n \t<li>Saler et poivrer les tranches de jarrets et saupoudrer de la farine. Secouer les pi\u00e8ces pour retirer l'exc\u00e9dent de farine.<\/li>\r\n \t<li>Dans un chaudron allant au four, verser de l\u2019huile d\u2019olive et placer sur un feu moyen \u00e9lev\u00e9. Attendre que l\u2019huile soit chaude puis d\u00e9poser les tranches de jarrets. Saisir les pi\u00e8ces de viande afin que la farine brunisse sans qu'elle ne br\u00fble. Retirer la viande du feu et r\u00e9server.<\/li>\r\n \t<li>Dans le m\u00eame chaudron, ajouter les oignons, l\u2019ail et les chanterelles. Remuer au besoin. Lorsque les oignons commencent \u00e0 devenir translucides, ajouter le c\u00e9leri et les carottes. Remuer au besoin. Faire cuire de 7 \u00e0 8 minutes jusqu'\u00e0 ce que les l\u00e9gumes soient mi-cuits, mais encore croquants.<\/li>\r\n \t<li>Lorsque tous les l\u00e9gumes sont saisis, ajouter le bouquet garni et les feuilles de laurier. D\u00e9glacer avec le vin blanc. Ajouter les tranches de jarrets, les champignons homards, le bouillon de b\u0153uf, les tomates en d\u00e9s, la p\u00e2te de tomate et le persil. Faire cuire quelques minutes, puis placer au four de 2 h \u00e0 4 h, selon l'\u00e2ge du chevreuil.<\/li>\r\n \t<li>Durant la cuisson, retirer le couvercle afin de laisser r\u00e9duire le liquide. Les pi\u00e8ces de viande doivent rester couvertes de liquide afin d\u2019\u00e9viter qu\u2019elles s\u2019ass\u00e8chent. Lorsque le bouillon a suffisamment r\u00e9duit, remettre le couvercle et le retirer environ 30 minutes avant le service.<\/li>\r\n \t<li>Environ 10 minutes avant le service, pr\u00e9parer le pain. Couper le chapeau du pain afin d\u2019exposer la mie (l\u2019int\u00e9rieur) de celui-ci. \u00c0 noter que les pi\u00e8ces de viande devront entrer dans le pain. Retirer la mie et presser la mie restante \u00e0 l'int\u00e9rieur sur la cro\u00fbte. Le pain ne doit pas avoir de failles dans la cro\u00fbte, sinon le liquide pourrait couler.<\/li>\r\n \t<li>Pr\u00e9parer la gremolata. R\u00e2per la gousse d\u2019ail et le citron. Dans un petit bol, bien m\u00e9langer l'ail, le citron et le persil hach\u00e9. R\u00e9server.<\/li>\r\n \t<li>Verser l\u2019ossobuco dans le pain, puis verser le bouillon au go\u00fbt.
